Sadly, summer is coming to an end – but we’re not quite ready to say goodbye. Still, there are some of you who love winter and can’t wait for it to be fall. Don’t worry, we’ve got your backs, too. This cocktail is the perfect combo of sweet summertime & fall flavors…
Sparkling Pomegranate Pitcher Cocktail:
- 1 cup of 100% pomegranate juice (before pomegranate reduction)
- 3 oz. of pomegranate reduction
- 4 oz. Cocchi Rosa
- 2 oz. fresh juice from 2 to 4 limes
- 16 oz. sparkling wine
- 4 orange twists
In a small saucepan, boil pomegranate juice over high heat, then lower it to a simmer and cook until reduced to 3 oz. This should take up to 10-15 minutes. Let it cool. (Life hack: you can store this in an airtight container for up to a month). Put the pomegranate reduction, Cocchi Rosa and lime juice on a pitcher. (Life hack #2: You can do all these steps the night before, if you want.) Right before serving, top it with sparkling wine and slowly stir to blend the ingredients. Pour it in glasses filler with ice and for garnish, add orange twist to each drink.
