We know that the best way to celebrate anything is with a great drink, so on Pineapple Day it’s only fitting that we put our pineapple drink inside a pineapple. To do this properly you need a pineapple de-corer which is a rather inexpensive and handy tool that helps you avoid the agony of scooping out the inside of the pineapple. It also keeps the pineapple bits in slices, which makes them easier to store for use. Once you’ve cored your pineapple and taken out the slices, put them in the freezer. Take the top of the pineapple and cut out a small wedge so there will be a place to put your straw.
Pineapple-Coconut Daiquiri:
- 1 slice of lime without the skin
- 3 mint leaves
- 2 cups frozen pineapple
- 2 scoops of ice cream
- ½ cup coconut milk
- ¼ cup coconut chips
- 1.5 oz rum
For Pineapple Strawberry Daiquiri:
- 2 cups frozen pineapple
- 1 cup frozen strawberries
- 2 scoops vanilla frozen yogurt
- 1 tablespoon sugar
- ½ cup pineapple juice
- 1.5 oz rum
Blend all the ingredients for your chosen cocktail and serve in your fun new pineapple cup!
